carter mckaughanirving vasquezAfter 27 years as a banker with Wachovia Bank, I woke up one day and realized that I was not just a regular banker, I was a Cheesy Banker! I decided right then and there that is was time to take off the coat and tie, lose the stiff upper lip, and get out in the street and have fun with the people!

Ever since moving to Wilmington in 1995 my family and I have loved the people of this area, and all of the great restaurants there are to choose from. I would say my wife Lynne and I have tried most of them at least once. I have always wanted to be a part of the food service industry.

There is no better way to accomplish that than with a Food Truck that comes to the customer. After months of research and visits to various Food Trucks in different cities, I knew this was for me! This is the most fun that I have had since graduating from college many years ago!

Come on, let me make you Cheesy too!

Irving Vasquez - Our Chef!

My name is Irving Vasquez born in New York City and I have a passion for great food.

It all started at Canyon Creek Country Club in 1991 in Richardson, Texas. I was a server there and I was asked to run the snack bar one day because the snack bar attendant called in. I cooked hot dogs, hamburgers, made club sandwiches, chicken sandwiches, etc.

The Cheesy Banker Food TruckI fell in love with food and cooking. Chef Ben Ortiz from Jersey recognized my passion and admiration for food and took me under his wing. I studied under him for 4 years. From Chicken Oscar to Veal Scaloppini to Château Briand, I mastered them all.

My passion and creativity for food has grown over the years and I have fine tuned my skills under Chef Dean Bauer at Beau Rivage Golf Resort.

I am currently cooking and preparing gourmet sandwiches & salads for Holy Grounds Coffee Shop on Carolina Beach Rd. in Wilmington, NC.

And now Wilmington will see my cheesier side.
